Cookery
The Lankaran Cookery is ancient and rich. During archaelogical excavations different cookery instruments, such as stone pans, pottery plates, ceramic, water pots, bowls, jugs and others have been found out in Lankaran. 21 sorts of meals are made of rice in the region. 23 sorts of meat, 7 sorts of poultry, 20 sorts of cereal. 9 sorts of fish dishes are known here. “Lavangi” is considered to be the most delicious meal.
Besides these, the local people cook 8 sorts of plov (rice meal), 5 sorts of pudding, 28 sorts of fruit dishes and different other meals.
The Lankaran Cookery differs from other regional cookeries with its variety. Everybody who comes to Lankaran and lasts its delicious meals confirms it.


Meals prepared in Lankaran:
Plovs: plov, dill plov, potato plov, pea plov and so on.
Fish dishes: fish with lavangi (mixed with nut and onion), fried fish, salted fish, caviar, fish kebab and so on.
Meals made of poultries: Chicken kebab (with lavangi), pan kebab, fisinjan, tike kebab, stuffed vine leaves, pity, kutab, bozbash, kallapacha, dolma and others.
Puddings: pudding of potatoes, pudding of eggplants, pudding of nuts, pudding of meat.
Cereals: khashil (porridge), dushpara, fasali, cake and so on.
Dairies: bulama, porridge, and so on.
Sweets: shakarbura, baklava, shorchorayi and so on.
